Crab and Spinach Bisque

Ingredients

1 c
chopped onion
1/4 can(s)
chopped celery
1/4 c
chopped bell pepper
3 Tbsp
chopped parsley
4 Tbsp
unsalted butter
2 Tbsp
flour
3 c
heavy cream or evaporated skim mik (hot)
1 c
chicken broth (hot)
2 pkg
frozen chopped spinach (drained)
1 lb
lump crabmeat
1
bay leaf
1 tsp
Worchestershire sauce
dash(es)
basil and thyme
salt and pepper

Step-By-Step

1Melt butter, saute' all ingredients until done.
2Add flour and blend well.
3Add cream and simmer for 10 minutes.
4Place spinach in food processor with chicken broth, puree'.
5Add pureed mixture to cream. Season to taste.
6Add crabmeat. Do not boil.
