clam chowder (my husbands)

My husband got this recipe from a wonderful man we had look after our Cape house when we went away. What a wonderful man he was, kind to all, he used to run a little general store , delivered meals to the needy, and his wife was in a wheelchair and his daughter was blind from birth. Very active in his church as well, may never meet such a person like this in your whole life! We were honored to have known him.

Ingredients For clam chowder (my husbands)

  • 2 qt
    clams
  • 2 c
    hot water
  • 3 slice
    of bacon, chopped fine
  • 3 md
    potatoes (optional) cut in small pieces
  • 1 md
    onion (minced)
  • 1 1/2 can
    evaporated milk
  • 1 c
    milk
  • good portion of black pepper
  • butter for frying onion in

How To Make clam chowder (my husbands)

    Steam clams after rinsing them in water in 2 cups of water. Save water to use in recipe. In a good sized pot saute onions in butter, just til softened.

    Add the water the clams were steamed in, potatoes, milk, and evaporated milk.

    Now let just simmer (do not let boil) til all is done and potatoes are just soft. Could sprinkle with a little parsley if desired.
