Cheese Potato Chowder

Ingredients

1 Tbsp
butter
3/4 c
onion, chopped
1/2 c
green bell pepper, chopped
3 c
milk
1 c
chicken broth
5/8 tsp
pepper
1.25 c
instant mashed potato flakes
3 Tbsp
blue cheese, crumbled
1/3 c
cheddar cheese, grated

Step-By-Step

1In medium saucepan, melt butter.
2Add onion and green pepper.
3Cook and stir until softened, about 5 minutes.
4Stir in milk, chicken broth and black pepper.
5Bring to a boil.
6Stir in potato flakes.
7Cook and stir until thickened, about 1 minute.
8Set aside 1 tablespoon each cheddar and blue cheese for later use.
9Stir in remaining cheddar and blue cheeses.
10Heat until melted, about 1 minute.
11Just before serving, sprinkle with reserved cheddar and blue cheeses.
