I threw this together yesterday for a "soup sale" day at work. It was a hit and I brought home an empty crockpot! This is not very spicy, but you could spice it up with hot Rotel and some red pepper.

Ingredients For white chicken chili

3 lgchicken breast halves, skinless and boneless

1/4 canolive oil

1/2 lgonion, coursely chopped

2 Tbspfinely chopped fresh garlic

38 ozchicken broth
-
3 cangreat northern beans, not drained

2 canwhite niblets corn
-
1 canrotel tomatoes not drained

1 1/2 Tbspcumin

1 Tbspchili powder
How To Make white chicken chili

1Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.

2Saute garlic and onion in oil until translucent.

3Add the rest of the ingredients and simmer for about an hour.

4This could also be made in a slow cooker (6 hours or so on low).
