White Chicken Chili

When colder weather creeps in and you're looking for a satisfying and quick meal, this is just the ticket.

If you have a deli-roasted chicken handy, you can whip this up in no time!

1 Tbsp
vegetable oil
1 large
onion, chopped
3 clove
garlic, crushed
1 can(s)
diced jalapeno peppers (4 oz.)
1 can(s)
chopped green chile pepper (4 oz.)
2 tsp
ground cumin
1 tsp
dried oregano
1 tsp
ground cayenne pepper
2 can(s)
chicken broth (14.5 oz. each)
3 c
cooked chicken, chopped
3 can(s)
great northern beans (15 oz. each), drained and rinsed
1 c
pepper jack cheese, shredded


1Heat oil in a large saucepan over medium-low heat. Slowly cook and stir onion until tender. Mix in garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue cooking for an additional 3 minutes.

Add chicken broth, chicken and great northern beans. Simmer 15-20 minutes, stirring occasionally.

Remove from heat. Slowly stir in cheese until melted. Serve warm.
