del monte® petite cut® diced tomatoes with green chilies
chickpeas (garbanzo beans)
boca (or other soy) ground crumbles
del monte tomato sauce
al dente elbow macaroni
shredded cheese (chili preferred)
Boil elbow macaroni until al dente, set aside.
In a large pot, add olive oil to cover bottom of pan, turn to medium heat. When hot, add in onions, garlic, green peppers and saute until onions are almost translucent. Add in Boca crumbles, and stir.
Combine the rest of the ingredients MINUS the noodles, chives, and cheese and stir until well mixed. Let simmer for an hour.
Add in the noodles and continue simmering for another 2 hours or longer. When done, add the cheese and top with the chives when serving.
