Momma's Chili

Kimberly McDaniel

This was the very first meal that I cooked by myself when I was a child. My mom taught me how to cook this, and I have "tweaked" it over the years, since my family likes it spicy. I have been married for 20 years and this is one meal that my husband and child say "No one can cook chili like you!" Makes me feel great!

1 lb
ground beef
onion, chopped
green pepper, chopped
1 can(s)
diced tomatoes
2 can(s)
tomato sauce
1 can(s)
chili beans
1 can(s)
white beans, rinsed well
1/2 can(s)
rotel (original)
1 tsp
chili powder
1/2 tsp
cumin powder
salt and pepper to taste

1Over medimum heat, start browning ground beef in large skillet.
2In large pot, dump diced tomatoes, tomato sauce, chili beans, white beans, rotel, chili powder and cumin. Stir well. Place over low heat. (If you don't like it spicy, you can leave out the Rotel)
3When ground beef is no longer pink, add chopped onions and chopped peppers. Don't let the onions and peppers "brown".
4When ground beef is throughly cooked, drain well.
5Add ground beef, onions and peppers to large pot.
6Simmer on low heat for 45 minutes, stirring often.
7Salt and pepper to taste, and simmer 15 more minutes.
8Serve and enjoy!
