Meatless Chili

I love my traditional chili with lots and lots of ground beef, but I am no longer able to digest beef and I was really missing the taste of chili. So, here is what I came up with. And it's a hit in our house!

dark red kidney beans
2 can(s)
diced tomatoes
1 can(s)
white hominy, drained
1 can(s)
garbanzos, with juice
1/4 c
frozen chopped onions
1 Tbsp
hot mexican chili powder
1/2 tsp
ground black pepper

Directions Step-By-Step

drain about half of the liquid off of the hominy, dump the remaining ingredients in the crock pot
adjust chili powder and black pepper to taste.
cook for 2 to 4 hours on hi, then you can eat it or turn down to simmer to enjoy later
