Ingredients

1 1/2 lb
boneless chicken, cubed
1 c
water
1 can(s)
cannelini beans, not drained
1 can(s)
diced tomatoes and green chilies, with roasted garlic, drained
1 Tbsp
olive oil
1 pkg
mccormick seasoning mix
2 Tbsp
goya, adobo all purpose seasoning
1 Tbsp
mccormick pinch perfect seasoning
1 - 3
jalapeno peppers, chopped

TOPPINGS

sour cream
shredded cheddar cheese
chopped avacado
shredded monterrey jack cheese

Directions Step-By-Step

Heat oil in large skillet on medium heat. Add chicken;sprinkle one side with Adobe seasoning cook for 2 - 3 minutes. Flip the chicken sprinkle with McCormick Perfect Pinch seasoning. Cook another 3 minutes or until no longer pink in the middle.

In a large sauce pan combine the seasoning, drained tomatoes with chilis, the un-drained beans and water. Bring to boil, lower heat to medium and add chicken.

I add 1 to 3 chopped jalapenos, depending on the amount of heat you would like.

Cover and simmer about 30 min.

Top with sour cream, shredded sharp cheddar cheese, green onions, more jalapenos (if desired),and some chopped avocado.
