Adapted from a recipe in "The Mini Page" kids' insert found in many newspapers. This dish is tasty and satisfying and practically dances with color.

Ingredients For colorful meatless chili

  • 1 Tbsp
    olive oil
  • 1
    small red bell pepper, chopped
  • 1
    medium zucchini, cubed
  • 1 c
    chopped mushrooms
  • 3 clove
    garlic, minced or crushed
  • 3/4 Tbsp
    chili powder
  • 1 tsp
    cumin
  • 1/8 tsp
    salt
  • scant 1/4 tsp
    cinnamon
  • 2 can
    diced tomatoes (do not drain)
  • 1 can
    red beans, drained
  • 1
    medium tomato, diced, or a few chery tomatoes, cut in half (to add color, use yellow or orange tomatoes)

How To Make colorful meatless chili

    Heat oil in large soup pot or wide, deep skillet over medium heat.

    Add all vegetables and garlic, stirring until vegetables soften.

    Add seasonings and cook an additional 5 minutes.

    Stir in tomatoes and beans.

    Heat on medium for 10 minutes, then lower heat and simmer for 25 minutes. During last 7-8 minutes, add chopped fresh tomatoes.
