The Whole Enchiladea Chicken Soup

Soup is one of my all time favorite things to make and to eat....this is a very good one :)

Ingredients

3 c
chicken broth (canned or your own)
1 1/4 c
celery, chopped
1/2 c
sweet yellow onion, chopped
3 c
green enchilada sauce
1 15 oz can(s)
pure pumpkin
10 oz
chicken , cooked and chopped ( i use the canned chicken )
1 c
white or yellow corn...canned or frozen
cheddar cheese, shredded ( for topping)
tortilla chips ( for topping)

Step-By-Step

1Dice celery and onion and add to chicken broth and boil

2Drain chicken if using canned chicken...

3Add remaining ingredients to pot and simmer for about 30 minutes

4serve with shredded cheddar cheese and tortilla chips as garnish....can add sour cream as well, if desired.

5ENJOY!!!!!
