Susan's Easy Tortilla Soup

When I worked full time, I was too tired to spend a lot of time in the kitchen when I got home. I love tortilla soup and experimented until I had an easy recipe I could throw together after work. The rotisserie chicken makes it so easy.

Ingredients

4 15 oz
cans low sodium chicken broth
1 16 oz
jar salsa
2 16 oz
cans black beans, drained & rinsed
1 16 oz
bag frozen corn, thawed
1 10 oz
can ro*tel diced tomatoes and green chilies
2 1/2 tsp
cumin powder
1/8 tsp
chili powder (or to taste)
1
rotisserie chicken, deboned & cut into bite size pieces
1
onion, chopped
2
garlic cloves, minced
1
small bunch cilantro (or to taste), chopped
juice from 1-2 limes
corn chips

Directions Step-By-Step

Saute the onion and garlic in a little oil until cooked.

Add the rest of the ingredients except the cilantro and lime juice and simmer for 15 minutes until heated through.

Remove from heat and add the cilantro and lime juice.

Serve in bowls and put crushed corn chips on top.
