Red, White and Green Soup

I love soups!! A local sandwich and soup cafe made this wonderful soup and I had to try and figure out their recipe....this is my version...pretty close!
Sometimes I feel like no chicken....I just add more beans. Use your favorite beans...I use black, white, or even black-eyed peas. Very filling!

Ingredients

1 Tbsp
olive oil
1 Tbsp
garlic, minced

onion, diced
32 oz
chicken broth, non-fat
1-2
chicken breasts, cubed
2-3 can(s)
white beans, rinsed
9 oz
spinach, fresh
1 can(s)
tomatoes, diced w/ garlic and basil
1 can(s)
rotel tomatoes (optional)
2 Tbsp
lemon juice
16 oz
water
salt, pepper, and basil, to taste
1-2 Tbsp
pesto (optional)

Directions Step-By-Step

In large kettle, saute onion, garlic and chicken breasts in olive oil till chicken is done (no pink).

Add spinach and cook till wilted. Add lemon juice, broth, water, and seasonings.

Add beans and tomatoes, and simmer till flavors meld.
