I'M NOT SURE WHERE I GOT THIS RECIPE..I'VE HAD IT A VERY LONG TIME,...I LOVE HOME-MADE SOUPS,AND CASSEROLES, AND I REFER TO THEM AS COMFORT FOODS...EVERYONE WHO HAS TRIED THIS SOUP, LOVES IT....

Ingredients

3 Tbsp
extra virgin olive oil
4 -6 clove
garlic
1 large
onion
1 15 oz
can of diced tomatoes
1 28 oz
can of crushed tomatoes
salt and pepper to taste
1 qt
chicken stock (i prefer to use chicken broth)
4 c
chopped stale bread
3 15 oz
cans of small white beans
1/2 c
grated parmesan cheese

fresh basil leaves

Directions Step-By-Step

IN A LARGE DUTCH OVEN OR (STOCK POT)..COOK THE DICED ONION AND THE MINCED GARLIC IN OLIVE OIL 7-8 MINUTES

DO NOT ADD THE CHOPPED STALE BREAD YET...BUT ADD THE REST OF THE INGREDIENTS AND BRING TO BOILING AND IMMEDIATELY TURN DOWN TO SIMMER FOR ABOUT 5 - 10 MINUTES.....

JUST BEFORE SERVING, ADD THE CHOPPED STALE BREAD AND STIR INTO THE SOUP...
