Ingredients For pantry chicken soup lite

  • 1/4 lb
    boneless, skinless chicken breast or thighs, cute into bite-sized pieces
  • 1/4 c
    chopped onion
  • 2 tsp
    butter
  • 1 c
    red potatoes, diced
  • 1/2 c
    carrot, shredded
  • 1 can
    reduced sodium chicken broth
  • 1/2 c
    water
  • 1/4 tsp
    pepper
  • 2 Tbsp
    uncooked rice
  • 1/8 tsp
    salt

How To Make pantry chicken soup lite

    In a small non-stick saucepan, saute chicken and onion in the butter until chicken is no longer pink.

    Stir in the potatoes, carrot, broth, water and pepper. Bring to a boil.

    Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

    Return to a boil; stir in rice and salt. Remove from the heat. Cover and let sit for 5 minutes or until rice is tender.
