Pantry Chicken Soup Lite

This is a great soup for those times when it is just you two....or maybe just you with an appetite for soup!

Ingredients

1/4 lb
boneless, skinless chicken breast or thighs, cute into bite-sized pieces
1/4 c
chopped onion
2 tsp
butter
1 c
red potatoes, diced
1/2 c
carrot, shredded
1 can(s)
reduced sodium chicken broth
1/2 c
water
1/4 tsp
pepper
2 Tbsp
uncooked rice
1/8 tsp
salt

Directions Step-By-Step

In a small non-stick saucepan, saute chicken and onion in the butter until chicken is no longer pink.

Stir in the potatoes, carrot, broth, water and pepper. Bring to a boil.

Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

Return to a boil; stir in rice and salt. Remove from the heat. Cover and let sit for 5 minutes or until rice is tender.
