Ingredients For mama’s chicken soup

  • 4-5 lb
    young hen, cut in pieces
  • 4 qt
    water
  • 1 lg
    onion, quartered
  • 3
    ribs celery with leaves, chopped
  • 3
    carrots, scraped and chopped
  • 4 tsp
    dried chicken soup base
  • 1-2 tsp
    salt
  • cooked rice, cooked noodles, or prepared matzo balls

How To Make mama’s chicken soup

    Put hen in water in large soup pot. Bring to boil and skim. Add onion, celery, carrots, soup base and salt. Cover and simmer til chicken is tender, about 2 hours.

    Remove chicken and reserve for other dishes. Strain broth and return to pot. Return carrots to broth and adjust seasoning. To serve, warm slowly and add rice, noodles or matzo balls. Serves 8 to 10
