Garden Veggie Soup with Grilled Chicken

1 1/3 c
multicoloured rotini pasta
1 tsp
olive oil, extra virgin
3/4 c
red onion, cut in 1/2" chunks
2 clove
garlic, quartered
1 tsp
chopped fresh oregano, or 1/4 tsp. dried
4 c
chicken broth
1 can(s)
diced tomatoes, drained (14.5 oz)
1/2 c
carrots, chopped
8 oz
grilled chicken breast, chopped
1/2 c
chopped fresh basil


1Prepare pasta per package directions. Meanwhile, in medium saucepan over medium heat, add oil then onion, garlic, and oregano. Cook, stirring often, until onions and garlic are tender, about 5 minutes.
2Add broth and bring mixture to a boil.
3Add tomatoes and carrots. Lower heat and simmer until vegetables are tender, about 15 minutes.
4Stir in chicken and pasta. Simmer to heat chicken through, about 2 minutes. Stir in basil. Season with salt and pepper to taste. Serve hot or refrigerate in plastic container and reheat before serving.
