Easy Chicken Tortilla Soup

Ingredients

1 pkg
bear creek tortilla soup mix
1 c
chopped onion
1 lb
cooked chopped or shredded chicken
1 can(s)
black or pinto beans
1 can(s)
chopped tomato mexcian style or chili style
1 c
thawed or canned corn
1/2 c
fat free sour cream
1/2 c
shredded low fat cheddar jack cheese
1/2 c
crushed tortilla chips or nacho chips

Directions Step-By-Step

Prepare soup mix according to package. Saute' the chopped onion in 1 T of butter or olive oil. I like purple onion but you can use yellow or green onions as well.

Add the canned tomatoes and the corn to the onion mix and heat through.

Add the tomato/corn mix, the canned beans (rinse first), and the cooked chicken to the soup base. Cook until all ingredients are heated through.

Pour into bowls and top with the sour cream, cheese, and crushed chips.
