Ingredients For chicken tortilla soup

2chicken breasts, cubed

1/2 tspolive oil

1/2 tspminced garlic

1/4 tspground cumin

2 canchicken broth

1 cfrozen corn

1 cchopped onion

1/2 tspchili powder

1 Tbsplemon juice

1 cchunky salsa
-
1 canblack beans
-
1 candiced tomatoes

8 ozcorn tortilla chips

1/2 cshredded monterey jack or pepper jack

How To Make chicken tortilla soup

1In a large pot over medium heat, sauté chicken. Mix in garlic and cumin. Then add broth, corn, onion, chili powder, lemon juice, salsa, beans and tomatoes. Reduce heat to low and simmer for 20-30 minutes. Serve with tortilla chips, top with shredded cheese and/or sour cream. Optional: add diced green chiles when simmering.
