Ingredients For chicken tortilla soup

    chicken breasts, cubed
  • 1/2 tsp
    olive oil
  • 1/2 tsp
    minced garlic
  • 1/4 tsp
    ground cumin
  • 2 can
    chicken broth
  • 1 c
    frozen corn
  • 1 c
    chopped onion
  • 1/2 tsp
    chili powder
  • 1 Tbsp
    lemon juice
  • 1 c
    chunky salsa
  • 1 can
    black beans
  • 1 can
    diced tomatoes
  • 8 oz
    corn tortilla chips
  • 1/2 c
    shredded monterey jack or pepper jack
  • sour cream

How To Make chicken tortilla soup

  • 1
    In a large pot over medium heat, sauté chicken. Mix in garlic and cumin. Then add broth, corn, onion, chili powder, lemon juice, salsa, beans and tomatoes. Reduce heat to low and simmer for 20-30 minutes. Serve with tortilla chips, top with shredded cheese and/or sour cream. Optional: add diced green chiles when simmering.
