How To Make tomatoes--a hint

  Don't let tomatoes go to waste at the end of the growing season if you don't have time to put them up. Just wash them and freeze them in bags--cutting large ones into quareters--until you are ready to use them. The night before making a sauce or soup, transfer the bags to the fridge. The next morning, just put the tomatoes on a baking sheet and let them thaw to room temperature--after about an hour the skins will slip off.

  Then use the tomatoes to make your favorite tomato sauce or soup.

  I have not tried this but it sounds like something that would work..if you have the room to store the tomatoes in the freezer.
