This soup is to die for. It was from a cook who owned his own Cafe. I am not a fan of sauerkraut but I tasted this soup I could not get enough. Enjoy!!!

Ingredients

4 c
chicken stock

med. red potatoes-diced

carrots- diced

stalks celery-diced

onion-diced
1 c
corned beef-diced
1/2 c
flour
1/2 c
butter
2 c
milk
1 c
swiss cheese-grated
2 Tbsp
vinegar
2 tsp
dill, dried
2 tsp
caraway seeds
1/2 tsp
pepper
2 c
sauerkraut

Directions Step-By-Step

Simmer first 5 ingredients for 20 min. Add corned beef, simmer for another 20 min.
Make white sauce with flour, butter, milk and cheese. Add to first mixture blend well.
Add vinegar, dill, caraway seeds, pepper. sauerkraut, blend well. Simmer all for 15-25 mins. or until soup looks ready.
Rye bread croutons would be great with this. Or just some toasted Rye Bread.
