Ingredients

1 lb lean ground beef or, for vegetarians, meatless crumbles
1 lg container vegetable juice (for those with spicier tastes, spicy veggie juice works well)
1 lg can mixed veggies (can use 2)
pasta (optional)
1 lg crock pot/slow cooker
salt and pepper to taste

My mom came up with this. Very easy, filling and yummy soup, can be made to order for different tastes, and, as it is a crock pot recipe, smells great when you come home!

 

Directions

1. Brown the meat/crumbles;drain.

2. Drain veggies, if wanted. Liquid in cans can also be used to help flavor the soup.

3. Add browned meat, vegetable juice and can(s) of veggies to the crock pot. Set on low and let cook.

4. If adding pasta, cook and add about 15 minutes before serving the soup. Salt and pepper to taste. Serve.

We called this vegetable soup when I was growing up. I believe my Mom added some onion and celery. Cooked it stove top then. Thanks!

Ann, one of the good things about this recipe is that it can be altered to fit so many different tastes. I know it is almost blasphemous to cooks but I am not a huge fan of onions, but I know this is an ingredient my grandmother would have added, as she used to eat onions like apples!
