This recipe from a clipping is a quick & warming supper. I am now adding green beans to the soup. If you don't use the "roux", soup will be wheat free.

Ingredients For ground steak soup

  • 1 1/2 lb
    lean ground round
  • 2 c
    diced onions
  • 1 c
    diced carrots
  • 1 c
    chopped celery
  • 1 Tbsp
    minced garlic
  • 3 can
    (13 3/4 oz or 14 1/2 oz) chicken broth
  • 1 can
    (16 oz) crushed tomatoes (make sure no cores make it into the soup)
  • 1 can
    (14.5 oz) green beans
  • 2 Tbsp
    worcestershire sauce
  • 1 tsp
    red pepper sauce
  • 1/2 tsp
    freshly ground black pepper
  • 1/4 c
    butter (optional)
  • 1/2 c
    flour (optional)

How To Make ground steak soup

  • 1
    Brown beef in a Dutch oven, over medium-high heat. Add onion, carrots, celery, and garlic; cook 10-12 minutes, until vegetables are softened.

    Add chicken broth, tomatoes, green beans, Worcestershire sauce, red pepper sauce, and ground pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes.

    Meanwhile, if using, melt the butter, in a small saucepan; stir in flour. Cook over medium-high heat, stirring, until deep brown. Whisk into soup; cover, and simmer 15 minutes more. Makes 11 cups.
