This recipe from a clipping is a quick & warming supper. I am now adding green beans to the soup. If you don't use the "roux", soup will be wheat free.

Ingredients For ground steak soup

1 1/2 lblean ground round

2 cdiced onions

1 cdiced carrots

1 cchopped celery

1 Tbspminced garlic

3 can(13 3/4 oz or 14 1/2 oz) chicken broth

1 can(16 oz) crushed tomatoes (make sure no cores make it into the soup)

1 can(14.5 oz) green beans

2 Tbspworcestershire sauce

1 tspred pepper sauce
-
1/2 tspfreshly ground black pepper

1/4 cbutter (optional)

1/2 cflour (optional)
How To Make ground steak soup

1Brown beef in a Dutch oven, over medium-high heat. Add onion, carrots, celery, and garlic; cook 10-12 minutes, until vegetables are softened.

2Add chicken broth, tomatoes, green beans, Worcestershire sauce, red pepper sauce, and ground pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes.

3Meanwhile, if using, melt the butter, in a small saucepan; stir in flour. Cook over medium-high heat, stirring, until deep brown. Whisk into soup; cover, and simmer 15 minutes more. Makes 11 cups.
