Notes from the Test Kitchen:
This soup has a different taste than the other taco soups I've tried over the years. I think it is the cilantro - added in just the right amount for my taste - that makes it extra special. The addition of the hominy is also a nice touch.

Ingredients

2 lb
ground chuck
1/2 c
chopped fresh cilantro
1 pkg
ranch fiesta seasoning mix
1 pkg
taco seasoning mix
1 large
chopped white onion
2 can(s)
ranch style pinto beans
1 can(s)
white hominy drained and rinsed
1 can(s)
fiesta corn drained
1 can(s)
rotel
1 can(s)
diced tomatoes
1 Tbsp
cumin
1 tsp
garlic powder
2 c
water
salt and pepper to taste
sharp cheddar cheese (optional)
sour cream (optional)
diced green onion (optional)
tortilla chips (optional)

Step-By-Step

1Brown ground meat with the onions. drain. add the rest of your ingredients and bring to a boil. turn heat to a simmer uncovered for an hour.

2serve with sour cream, tortilla chips, and sharp cheddar cheese, and dices green onion on top.
