Tastes just like halupki (cabbage rolls in polish) It's so good. My friend Chelly Bundy, who is a fanatastic cook, shared this with me. She is polish, and makes the best polish food around. She really knows her stuff! Chelly uses 2 tbsp of oil in the rice, and 2 tbsp to brown the meat; feel free to do the same. She sometimes serves this with mashed potatoes.

Ingredients For easy cabbage roll soup

  • 1 Tbsp
    olive oil, extra virgin
  • 1 c
    brown rice, raw
  • 1 qt
    + 2 cups beef stock, low fat
  • 1 1/2 lb
    ground beef, or turkey
  • 1
    onion, diced
  • 1-2
    carrots, sliced into rounds
  • 2-4 clove
    garlic. minced
  • 1/2 -1
    head of cabbage, thinly sliced
  • 28 oz
    diced tomatoes
  • 15 oz
    tomato sauce
  • 1/2 c
    ketchup
  • 1
    bay leaf
  • salt and pepper
  • garlic powder

How To Make easy cabbage roll soup

    Heat a saucepan over med-high and add olive oil. Add rice and stir to coat with oil. Pour 2 cups of beef stock over the rice, bring to boil, cover and cook for 20 min.

    Heat a large, deep pot over med-high, spray with cooking spray, add the beef and cook unitl browned, drain. Season with salt, pepper and garlic powder.

    Add onions, garlic and bayleaf to meat. Cook until the onoin and carrots begin to soften, then add cabbage.

    Add the tomatoes, tomato sauce and remaining beef stock, cover the pot. Raise the heat to high until it starts to boil, then turn down to a simmer.

    Once the rice is cooked, add to the soup and continue to simmer. Adjust the salt and pepper to taste, remove bay leaf and serve. This will be very thick; like a "stoup".
