I got this recipe from a friend after seeing it on Food Network's, Diners, Drive-in & Dives. It's strange, but so very tasty. It really does taste like a cheeseburger.

Ingredients For cheeseburger soup

  • 2 lb
    lean ground beef
  • 1-2 tsp
    hamburger seasoning
  • 1 lg
    onion, diced
  • 1 Tbsp
    butter
  • 32 oz
    chicken broth
  • 1/2 lb
    velveeta cheese, cubed
  • 1/2 jar
    ragu cheddar cheese sauce
  • 1-1 1/2 pt
    half and half
  • 2 Tbsp
    flour
  • 1/2 c
    water
  • 3 md
    tomatoes, diced
  • 1/2 md
    head lettuce, shredded

How To Make cheeseburger soup

    In a skillet sprayed with cooking spray, brown the ground beef. Season with your choice of hamburger seasonings—I used McCormick Hamburger seasoning. Drain and set aside.

    In a large soup pot, add 1 Tbs. butter, and diced onion. Allow the onion to sweat over medium heat. When the onions become translucent, you are ready to continue.

    Add the chicken broth, the diced Velveeta, the Ragu cheese sauce, and the half & half. Allow the Velveeta to melt into the mixture.

    Add the ground beef to the soup pot. Mix the flour and water to make a slurry, and add to the pot; bring to a boil, to thicken, then turn down to medium low heat.

    Dice tomatoes and shred lettuce and then add to the mixture. Stir to combine and turn to low heat until ready to eat.
