Ingredients

1/2 lb
ground beef
3
celery stalks, with the leaves
2
carrots
1
onion
1 c
barley, uncooked
2 clove
garlic
2
bay leaves
1 tsp
thyme, dried
1/4 tsp
pepper
6 qt
water
2
beef bouillon, cubes

Step-By-Step

1In a lg heavy stock pot cook the ground beef on medium heat. Remove 1/2 of the fat from the pan.

2Meanwhile chop veggies.

3Add veggies and spices cooking for 5 min. stirring often to keep from burning.

4Add the water and bouillon cubes. Bring to a boil on high heat. Reduce the heat to med-high and cook for 30 minutes.

5Add the barley and continue to cook uncovered for about an hour.
