This is a very flavorful soup and delicious served with cornbread. I sometimes substitute a cup of cubed ham for the sausage. I do like the sausage the best. You will get compliments on this soup. Double if you have more that 4 people.

Ingredients For tuscan bean soup

  • 1/2 lb
    great northern beans
  • 1/2 lb
    hot or mild italian sausage, browned
  • 2
    celery ribs, diced
  • 2
    carrots, peeled and diced
  • 1
    bay leaf
  • salt & pepper to taste
  • 2 can
    chicken broth
  • 1
    small onion, diced
  • 2
    garlic cloves, minced
  • 1 can
    petite diced tomatoes
  • 1 tsp
    basil
  • 1 tsp
    0regano
  • 1 c
    cooked greens,iused collards.

How To Make tuscan bean soup

    Cook beans according to package instructions

    Add remaining ingredients and cook until vegetables are tender.
