donna's Story

This soup is so good. My cousin gave me this recipe and it makes alot. I freeze leftovers.

Ingredients

1 lb. ground meat
1 lg. onion, chopped
1 15 oz.can kidney beans
2 16 oz. cans chilli beans
2 15 oz. cans white shoepeg corn
1 8 oz. can tomato sauch
2 cups water
1 14 oz. can diced tomatoes
1 4 oz. can chopped green chilli peppers
1 15 oz. can black beans
1 pkg. taco sauce

Directions Step-By-Step

cook ground meat until done. drain. put all ingredients in crock pot and cook on low for 8 hours. i use fritos with soup instead of crackers. you can top with shredded cheddar cheese and sour cream

I had never made it that way before until a good friend who was dying of cancer and he was on a organic diet. I went to the extreme to make sure that I could make this recipe so he could eat it as he wanted some so bad. He was not supposed to have beef so I bought organic chicken. That's is how I came to make this with chicken. So there are special memories of why I made the soup this way. Thank you and I hope you enjoy it.

I never thought about diced up chicken. I bet that is good. The next time i make it that is what i am going to use. Thanks so much for telling me that.

Donna, this is always a family favorite of ours as well. I also add sliced black olives to mine and I've made it with diced up chicken instead of the ground beef. And I also serve with corn chips....it is wonderful on a cold rainy day!
