YUMMY! tastes like stuffed green peppers. It is easy to make and it's hearty and filling.

A perfectly simple way to enjoy all the robust flavors of stuffed peppers!


1 lb
ground beef
1 medium
bell pepper, chopped
1 c
finely diced onion
1 can(s)
29 oz diced tomatoes
1 can(s)
15 oz can tomato sauce
1 can(s)
14 oz chicken broth
1/4 tsp
thyme, dried
1/4 tsp
dried sage
2 c
cooked rice

Directions Step-By-Step

In large pot brown ground beef, drain off fat and add onions and peppers, cook until the onions are translucent but not letting them brown
Add, tomatoes (undrained) tomato sauce, broth, Thyme and sage stir.
Cover and let simmer for 30-40 minutes until peppers are tender. Add tw0 cups cooked rice stir to heat. serve
I like grated Cheddar or Munster cheese on top of mine.

I just realized that I was the last one to comment on this recipe back in Sep of 2014. Can't believe I waited almost a year to make it again. It is soooo good!

Gail....Just had to tell you. I made this AGAIN tonight. It turned out just as good or maybe even better than the last time I made it. Hubs and I LOVE this SOUP!!
Have enough leftover for another meal....maybe two.....even after Hubs three helpings.
The only thing I added that is not in your recipe is a teaspoon of salt.

Jan~ I have made this soup multiple times. It is the best stuffed green pepper soup I've made. So glad you tried it. ;)

Cooked this today and it had a wonderful flavor! I did put 1 cup of dry rice at the beginning to cook along with the other ingredients. I added an extra can of chicken broth and a cup of water to replace the liquid the rice would soak up during cooking. I also added a couple of minced garlic cloves. It really did taste like stuffed bell peppers and I was surprised at how much it made! So happy to have enough leftovers for another meal!
