Cleaning out my deep-freezer, I found a package of ham left over from last Christmas. I threw this together in about 10 minutes in my slow-cooker in the morning, and dinner was ready by evening.

Ingredients For slow-cooker ham and bean soup

  • 1 lb
    ham, diced
  • 3 can
    beans - pinto, navy, roman, or any combination
  • 1 md
    onion, chopped
  • 1 lg
    carrot, or 2 small ones, chopped
  • 2
    ribs celery, chopped
  • 1 md
    green pepper, chopped
  • 32 oz
    water or vegetable broth

How To Make slow-cooker ham and bean soup

    Place all ingredients, except for one can of beans, in the slow-cooker and set to low for 8 hours.

    Around hour 7, use stick blender in soup for about 2 minutes. Alternately, if you don't have a stick blender, take about 2-3 cups out and whirl in blender or food processor for a minute or two. Add back into cooker and add the other can of beans. Cook for another 45min to an hour.

    Serve with cheese bread or sandwiches!
