Monk's Bean Soup
|1 pkg||great northern beans (16 oz)|
|1 large||smoked ham hock (or 2 small-medium)|
|1 large||onion, chopped|
|seasoned salt, to taste|
|fresh cracked black pepper, to taste|
This is a wonderful flavored bean soup invented by my cousin Monk.
I make this in a slow-cooker, usually overnight. It can take up to 15 hours to cook depending on your cooker. You can easily half the time by cooking on high and still come out with the same great bean soup in less the time.
All seasoning amounts are easily adjustable. Although, for a great dill flavor I recommend using at least 1 Tbsp of dill.
This is one of those soups that are even better the next day.
