Ingredients For lime cilantro black bean soup

  • 2 can
    black beans, drained (15.5 oz ea.)
  • 2 c
    chicken stock (or broth), low sodium, low fat
  • 1 c
    salsa, medium (or your preference)
  • 2 tsp
    cumin, powdered
  • 1/4 c
    onion, chopped
  • 1/4 c
    lime juice
  • 1 tsp
    olive oil
  • 1/4 c
    fresh cilantro, chopped (plus more for garnish, if desired)
  • light sour cream, for garnish (if desired)

How To Make lime cilantro black bean soup

  • 1
    Saute the onions in the oil.
  • 2
    Put everything else except for one can of black beans into a blender or food processor, and puree.

    Pour mixture into the pot with the sauteed onions.

    Add the remaining, whole black beans, and heat through. Serve with cilantro and sour cream for garnish (if desired).

    Note: this is also good with crumbled tortilla chips sprinkled on top. Maybe some shredded cheese of your choice.
