Wash the vegetables and chop them in small pieces. Heat a medium pot with some cooking spray, place the onion and garlic first, cook for 2-3 minutes, add carrots and tomato, cook for 3 more minutes
Preheat the water in a tea kettle and transfer the vegetables, water and add lentils to a slow cooker.
Set the slow cooker on high, add salt pepper and cilantro, Cook for 4 hours or until the lentils are tender but not mushy. Enjoy!
