Bean With Bacon Soup

This recipe evolved with my trying to duplicate the taste of Campbell's Bean with Bacon soup, so I would not have to use canned soups all the time. It comes pretty close. I still find myself using the cans, but this has become a family favorite.

Ingredients

2 c
dry navy soup beans
2 qt
water
12 oz
bacon, cooked and crumbled
(or use equivalent amount of vegetarian bacon strips)
1
carrot, finely chopped
1
celery stalk, finely chopped
1/2 c
onion, finely chopped
1/4 c
tomato sauce or ketchup
salt and pepper to taste

Step-By-Step

1Soak beans 6 hours or overnight. Drain off soaking liquid.
2Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.
3When beans are done, stir in tomato sauce, salt and pepper to taste. Heat through about 10 minutes (30 minutes on high for crock pot).
4Serve with corn bread, or over spoon bread.
