Ingredients For pineapple-raspberry breakfast parfaits

  • 1/4 c
    sliced almonds
  • 2 c
    fresh pineapple, chopped or 1 (20 oz) can pineapple tidbits, drained
  • 1 c
    fresh or frozen raspberries, thawed if frozen
  • 1 c
    low-fat vanilla yogurt
  • 2 md
    firm bananas, peeled and sliced
  • 1/3 c
    chopped dates
  • fresh mint for garnish

How To Make pineapple-raspberry breakfast parfaits

    Preheat oven to 350°F. On baking sheet, spread almonds in a single layer. Bake 7-10 minutes, or until lightly toasted, stirring frequently; set aside.

    Layer pineapple, raspberries, yogurt, bananas, and dates, in 6 parfait glasses or individual dessert dishes; sprinkle with almonds. Garnish with fresh mint, if desired. Serve immediately.
