For some reason in Texas we love our avocados and will use them in any way possible. This is just one of the many ways I've found to use an avocado.

Ingredients For avacado cheese ball

  • 2 (8) pkg
    cream cheese, softened
  • 1 c
    grated sharp white cheddar cheese
  • 1 c
    grated, mild cheddar cheese
  • 1 lg
    ripe avocado, mashed
  • 1 md
    onion, grated
  • 1/2 c
    pecans,finely chopped
  • 2 clove
    garlic, presed or grated
  • 1 (4 ) pkg
    can chopped green chilies, drained
  • 1 bunch
    parsley, stems removed and leaves chopped finely

How To Make avacado cheese ball

  • 1
    Mix cheeses well in a medium glass bowl. Mix in avocado, onion, nuts, garlic, and green chilies. Adjust seasonings to taste with salt and white pepper.

    Shape into 1 large ball or 2 small balls. Roll in parsley. Wrap in plastic wrap and refrigerate until set.

    Serve on serving plate with good quality crackers.
