Incredible Caramel Popcorn

I spent years trying to find that perfect caramel corn recipe and finally gave up because they all seemed to come up just a bit short on flavor....until I created this one...which turned out to NOT be my own as I've seen this recipe a few times since I posted this one.
My husband, who is not a fan of popcorn has refused to try it until this year...I finally convinced him to eat just one piece. That one piece turned into a full gallon zip-loc baggie that was empty within just a few hours. It's a Holiday favorite within my family and circle of friends so I hope you enjoy it as much as we do.

1 1/4 c

brown sugar, firmly packed
1/2 c
light karo syrup
1 tsp
1 tsp
baking soda


1Preheat oven to 200 degrees.
Air-pop popcorn and place in very large heat proof bowl.

2In large saucepan melt butter, brown sugar, karo syrup and salt and bring to boil. Allow to boil 3 minutes, stirring constantly.
Remove from heat, baking soda and stir till light and fluffy.
Pour over popcorn and fold till popcorn is evenly coated. Pour onto 2 lined and sprayed cookie sheets.

3Bake 30 minutes, remove from oven and toss gently again to re-coat popcorn and bake another 30 minutes.
Let cool and store in airtight container.
