peck of sweet apples
cinnamon sticks, if you wish
1Pare, core, and halve the apples.
2Cover the apples overnight with the sugar.
3Next morning, set them on the fire, and add the cinnamon and the cloves.
4Cook the apples until they are easily stuck with a fork.
5Add the vinegar, and boil another five minutes.
6Seal in jars while the apples are still very hot.
7A cinnamon stick can be added to each jar, if you wish.

My grandmother made these and I would love to do it too. My father used to tell me there was a certain type of apple that is best for this...very big, and very hard...but I cannot think of the name of the apple now. Do you recall ever getting this information?
