I decided to play around with a Chex Mix recipe one day and came up with this. I made the mistake of shipping a batch to my husband and some of his fellow soldiers while he was deployed. I learned all about supply and demand after that. I had to make double and triple batches and they still ate it faster than I could make it! Hope you enjoy it as much as we do! It's a definite keeper!

Ingredients For maple cinnamon almond chex mix

  • 1 box
    cinnamon chex cereal - 13.5 oz
  • 3/4 box
    rice chex cereal - 12.8 oz
  • 10 - 12 oz
    almonds, sliced
  • 1 1/2 c
    white sugar
  • 1 1/2 c
    light corn syrup
  • 18 Tbsp
    butter = 2 sticks + 2 tablespoons (no substitute)
  • 1 pinch
    salt
  • 1/2 tsp
    maple extract

How To Make maple cinnamon almond chex mix

    Mix the Cinnamon Chex, Rice Chex and almonds together in a large plastic bowl.

    In a heavy saucepan over medium heat, bring the sugar, corn syrup, salt and butter to a boil. Stir occasionally until it turns golden and coats the back of a spoon, approximately 4 1/2 - 5 minutes.

    Remove from heat and add the extract, stirring well.

    Immediately pour over the cereal mixture and stir to coat.

    Spread onto parchment paper and let cool. Store tightly covered.

    NOTE: This makes a HUGE batch of Chex mix! It can be halved with no problems. Also, maple extract is pretty potent! If you'd like a stronger maple flavor, you can increase to 3/4 teaspoon.
