Ingredients

5 lb
cheap hamburger meat
3 tsp
liqud smoke
2 tsp
garlic powder
3 tsp
mustard seed
3 tsp
coarse ground black pepper
3 tsp
whole black pepper
4 Tbsp
curing salt

Directions Step-By-Step

Mix all ingredients in a large bowl. Cover or wrap and put in refrigerator.

Knead for 5 minutes, everyday for 3 days. On the 4th day, make into 4 long rolls.

Bank in oven at 150 degrees for 9 hours.

    Hi guys... Sorry for the delay... this is actually a very old recipe that my grandparents passed down so I am not sure on the particulars... Just know as a young child it was good... I am assuming that the curing salt is what helps to dry the meat out... and am sure that you can probably get it at a meat market or certain stores... I would google it and see where the closest place you could purchase it.

    That seems like they are going to be really big logs instead of sticks; can you also roll them into small sticks (like slim jims)? Have you ever tried that and if so; do you think that I would need to adjust the oven time?
