These are really yummy. My 16 month old loves them too...minus the cranberries and raisins.

Throw a couple of these homemade granola bars in a resealable bag and you have a great on-the-go snack. They're chewy, sweet, and full of texture. Puffed rice gives them a little crunch and the oats are chewy. The peanut butter flavor is faint, but there. We loved the tart contrast from the dried cranberries. So good!

Ingredients For chewy granola bars

  • cooking spray
  • 2 c
    old-fashioned oats
  • 2 c
    puffed rice cereal
  • 1/2 c
    sunflower seeds and/or slivered almonds
  • 1/4 c
    wheat germ
  • 1/2 c
    coconut, shredded
  • 1/4 c
    dark or semi-sweet chocolate chips
  • 1/4-1/2 c
    raisin and/or craisins
  • 1 c
    brown sugar
  • 1 c
    corn syrup, light
  • 1 c
    peanut butter, creamy
  • 1 tsp
    pure vanilla extract

How To Make chewy granola bars

  • Parchment paper covered in cooking spray in a baking dish.

    Line a 13x9-inch pan with parchment or wax paper. Spray with cooking spray.
  • Oats, puffed rice, sunflower seeds, wheat germ, chocolate chips, coconut, and raisins in a bowl.

    In a large bowl combine oats, puffed rice, sunflower seeds, wheat germ, chocolate chips, coconut, and raisins. Set aside.
  • Brown sugar, corn syrup, and peanut butter in a bowl.

    In a microwave-safe bowl, combine brown sugar, corn syrup, and peanut butter. Heat on high for 2 minutes until the mixture boils, stirring halfway through.
  • Adding vanilla extract.

    Stir in vanilla extract.
  • Pouring peanut butter mixture over oat mixture.

    Pour the peanut butter mixture over the oat mixture; stir until it is moist.
  • Mixture pressed into the baking dish.
