Ingredients For scalloped corn

  • 14
    ritz crackers
  • 1 slice
    bread, white, torn into pieces
  • 3 Tbsp
    butter, unsalted, melted
  • 2 - 3 bags
    corn, frozen, thawed
  • 1 1/4 c
    half & half
  • 1 1/2 tsp
    salt
  • 1/4 tsp
    black pepper

How To Make scalloped corn

    Preheat oven to 450 degrees F. A.djust oven rack to middle position. Spray 8" square baking dish with cooking spray

    Place crackers, bread & butter in a food processor until coarsely ground.

    In a large saucepan, bring corn, half & half, salt & pepper to boil. Reduce heat to medium-low & simmer, covered until corn is tender, 20 - 30 minutes.

    Puree 2 C corn mixture in blender or food processor until thick & smooth. Return puree to cooked corn & stir to combine.

    Transfer corn mixture to prepared dish. Top with crumb mixture & bake until golden brown, 7 - 10 minutes.
