I am trying to share recipes that make good travel recipes..I made these for a quick happy hour more than once..I kept the canned corned beef handy just in case

Ingredients

triscuit crackers
1 1/4 c
shredded swiss cheese..divided
1 can(s)
8 oz. sauerkraut, drained
1/4 lb
corned beef chopped
3
eggs
1 1/2 c
milk
1/4 c
dijon mustard
1 Tbsp
chopped parsley

Step-By-Step

1Preheat oven to 350
2arrange 28 crackers in rows in a greased 13 x 9 pan
Cover with layers of 3/4 cup of the cheese, the saurkraut, corned beef and then remaining half cup of cheese. Top with remaining crackers
3Beat eggs, milk, mustard, and parsley with wire whisk until well blended, pour over ingredients in baking dish
4Bake 40 minutes or until puffed and golden brown.Let stand 10 minutes..Cut into 28 squares, cut between the crackers and serve warm
