Ingredients

1 1/2 c cooked chicken, finely chopped
2 Tbsp yellow mustard
3/4 c real mayonnaise
1/2 large celery stick, finely diced
1 large scallion, finely diced using the green
1/4 c chopped bread and butter pickles ( or sweet relish)
1 box basket of cherry tomatoes, cut each one in half
1 c shredded cheese
ritz crackers, original
Pinched by dribble, and 83 more.

Janet's Notes:

These make great snacks to munch on while visiting with friends or during a football game!

Be prepared to make a lot of these because they are very addicting!

Directions

In a medium mixing bowl add your chicken and mustard.

starting adding all your other ingredients except the cheese and mix

On a cookie sheet place your ritz crackers salty side down.

Add a little of your chicken salad on top.

Place some cheese on top of that.

Put in your oven on 350 degrees and heat up just until cheese starts to melt.

Take your tomatoes that you cut in half and place one on top of each cracker.

Serve up!

I made them yesterday with left over boiled chicken I had from making chicken and noodle soup. I never use all the chicken. I couldn't make them fast enough! My goodness.....

LOL...I cook a lot in large quantities then freeze up what we don't use for another day.
I'm taking a Culinary course in pastry, so I will have more pretty soon!
