Ingredients For hot pineapple casserole

  • 1 c
    water
  • 1 c
    sugar
  • 1 sm box
    pineapple jell-o, dry
  • 3 Tbsp
    cornstarch
  • 1 - 20 oz can
    pineapple chunks in 100% pineapple juice
  • 8 oz
    cheddar cheese, shredded
  • 2 sleeves
    ritz crackers
  • 1 stick
    butter, melted

How To Make hot pineapple casserole

    Preheat oven to 350 degrees F. Spray an 8" x 8" baking dish with nonstick cooking spray.

    In a medium pot over medium heat, whisk together water, sugar, pineapple jell-o mix & cornstarch until thoroughly combined & you get all the lumps out.

    Turn heat up to high & let mixture to come to a boil & thicken. Continue to whisk. Once thickened take off heat & drain pineapple chunks thoroughly, reserve pineapple juice. Add drained pineapple chunks to pot & stir.

    While pineapple mixture is cooling, begin making topping. In food processor, finely crush Ritz crackers. Add crackers, melted butter & reserved pineapple juice into a medium bowl & stir until combined.

    Add shredded cheese to cooled pineapple mixture & pour into prepared baking dish. Spread cracker topping over pineapple mixture. Bake for 30 - 35 minutes or until topping is golden brown. Serve warm!
