1 cwater

1 csugar

1 sm boxpineapple jell-o, dry

3 Tbspcornstarch

1 - 20 oz canpineapple chunks in 100% pineapple juice

8 ozcheddar cheese, shredded

2 sleevesritz crackers

1 stickbutter, melted
How To Make hot pineapple casserole

1Preheat oven to 350 degrees F. Spray an 8" x 8" baking dish with nonstick cooking spray.

2In a medium pot over medium heat, whisk together water, sugar, pineapple jell-o mix & cornstarch until thoroughly combined & you get all the lumps out.

3Turn heat up to high & let mixture to come to a boil & thicken. Continue to whisk. Once thickened take off heat & drain pineapple chunks thoroughly, reserve pineapple juice. Add drained pineapple chunks to pot & stir.

4While pineapple mixture is cooling, begin making topping. In food processor, finely crush Ritz crackers. Add crackers, melted butter & reserved pineapple juice into a medium bowl & stir until combined.

5Add shredded cheese to cooled pineapple mixture & pour into prepared baking dish. Spread cracker topping over pineapple mixture. Bake for 30 - 35 minutes or until topping is golden brown. Serve warm!
