Gluten Free Appetizers

chickpea flour
3/4 tsp
1/2 tsp
black pepper, ground
1 c
5 Tbsp
olive oil, divided 2, 2, 1
1 1/2 tsp
minced fresh basil or 1/2 tsp dried rosemary
1/4 tsp
garlic powder
1/4 - 1/2 c
cheese, grated (your choice)

Directions Step-By-Step

Sift chickpea flour in a medium bowl. Stir in salt and pepper. Gradually whisk in water to create a smooth batter. Stir in 2 Tblsp olive oil. Allow batter to rest at least 30 minutes.

Preheat oven to 450. Wait 10 minutes and place a 9-10 inch iron skillet in oven to heat.
While skillet is heating add basil, rosemary and thyme to the batter and whisk until smooth. Carefully remove skillet from oven. Add 2 Tblsp more of olive oil to the skillet and swirl to coat evening. Immediately pour in the batter and spread it out evenly.

Bake 12-15 minutes or until edges begin to pull away from sides and center is firm. Remove skillet from oven. Then turn oven to broil. Brush top of mixture with 1 Tblsp of olive oil. Top with grated cheese. Place skillet back in oven and broil for 2-4 minutes until cheese is melted. Cut into wedges or small shapes and serve warm.
