Zucchini Vegetable Mixture

This is a recipe I got my a friend of mine quite a few years ago. It's a recipe to use some of the many zucchini's you have from your garden, or someone has given you. There isn't any exact amounts, it's whatever amount you want to use. When I make it in the summer, I cook it on my gas grill, but if I do it in the winter I cook it in my oven, either way it turns out good. If I cook it on my gas grill, I use a medium setting, in the oven 350 degrees. On the grill you have to stir it often. This is good today but better tomorrow.

Ingredients

zucchini
potatoes
onions
peppers, red, green, can use hot peppers if you like spicey.
celery
carrots
parsley
garlic, i like to use fresh garlic if i have it.
salt & pepper
italian seasoning
olive oil

Directions Step-By-Step

If I am using the gas grill to cook this, I use an aluminum throw away pan, which I spray with cooking spray.

Cut all your vegetables into bite size pieces.Try to keep them about the same size. Use as many of each vegetable as you like, for as much as you want to make. Put all the vegetable into the pan.

Add you salt, pepper, garlic & Italian seasoning. At this point I mix the vegetables with my hands to get them all mixed together, and the spices mixed into them.

Drizzle on you olive oil, mix everything together. Cover with foil, and put on the grill or in your oven. If you do it on the grill you have to keep stirring it or it will burn. Cook until vegetables are tender.
