1 egg
1/4 c diced yellow onion
1/4 c shredded cheddar cheese
1/4 c italian bread crumbs
salt

Kelli's Notes:

These little "tater tots" are so crispy and tasty. And so much more healthy than real tator tots! They smell wonderful while baking. The recipe calls for the use of a 12 cup mini muffin pan- which I do not have. So I used my regular muffin pan and made 6 large ones. They were a hit! Next time I'm doubling the recipe and making 12 large. ;)

 

Directions

Preheat oven to 400. Prepare either a mini muffin pan (you will get 12 tots) or a regular muffin pan (you will get 6 large tots) with cooking spray.

Place the grated zucchini in a paper towel or towel and drain off the excess water. This is an important step so you don't end up with soggy tots.

In a bowl, combine the zucchini, egg, bread crumbs, onion, cheese, salt, and pepper. Place into the prepared muffin tins.

Bake for 15-20 minutes, until golden and really crispy.

These are delicious and super easy! My daughter loves zucchini so this is just another recipe to add to the list!!

Hi Kelli,
This is going to be my first recipe when my zucchini is ready but I have a hard time getting the juice out so I use my 'Ricer' to squeeze it.A Ricer looks like a large garlic press.
